Temptation is all around us. We can’t go five feet without seeing an ad for something indulgent or a commercial displaying a dessert with enough calories for an entire day. And maybe that isn’t challenging for you… but when you have the family sweet tooth, it can be problematic at times. However, when we became plant-based we wanted to find sweet alternatives to highly processed confections. This pudding has become our go-to treat without the guilt.
Chia is an ancient grain from the Mayan and Aztec cultures that means “strength.” It is packed with healthy omega-3 fatty acids, protein, vitamins, and minerals. It has a mild nutty flavor that can be used in either food or beverages. The chocolate almond milk gives you all the rich chocolate flavor of an indulgent chocolate bar but with a fraction of the calories. Additionally, it is full of vitamins D & E and has 50% more calcium per serving that dairy milk. Finally, the sweet and savory toasted coconut adds a flavor that is reminiscent in many popular candy bars and desserts when paired with the rich chocolate. It will almost remind you of your favorite childhood pudding.
This fun and healthy dessert comes together with ease and speed. Simply mix, top, and allow to expand in the refrigerator. Easy as pie. Scratch that, pudding. Ba-dum-ch.
Tomorrow is National Chocolate Mousse Day so we thought this chia pudding would be a great alternative for those following a plant-based diet or for someone who loves to try new things.
Following a plant-based diet doesn’t mean that you can never indulge. This chocolate coconut chia pudding is a great way to reward yourself after a productive day. However, you will still feel proud and accomplished that you resisted those persuasive ads and also satisfied that sweet tooth.
- 3 Tbsp. Chia Seeds
- ½ Cup Chocolate Almond Milk
- 1 Tbsp. Dried Coconut Flakes (Toasted)
- In a small bowl place the chia seeds and almond milk. Whisk or stir to combine thoroughly. Allow to sit for 10 minutes.
- In a skillet over medium/high heat toast the coconut flakes for 3-4 minutes. Stir occasionally so the coconut toasts evenly.
- Sprinkle the toasted coconut onto the chia pudding and place in the refrigerator for an hour.
