Ingredients
- 3–4 Loose Beets
Instructions
- Preheat the oven to 400°F.
- Wash a scrub the beets well with a vegetable brush.
- Place in a high-sided pan to avoid rolling.
- Add 1/4 cup water to the pan and cover with tin foil.
- Place in the oven to roast for 45 minutes.
- Remove and allow to cool.
- When cool to the touch, remove the outer layer. It should fall off rather easily, exposing the roasted beet. You can use your bare hands and if you are having difficulty, try to remove under running water. This often helps with stubborn beets.
- Slice and use the warm beet in a salad, or allow to cool and refrigerate whole beets to be used at a later time.
- Store the beet in an airtight container for up to a week.
