I will be honest, when I first heard about savory oatmeal, I thought it was a little strange.  I mean, oatmeal is for breakfast!  But then I tried this anytime meal… WOW!  I could eat steel cut oats now for morning, noon, or night – no question.

Here is why you might want to try steel cut oats before you grab your normal rolled oats:

  • More fiber
  • Lower on the glycemic index (how rapidly they affect blood sugar)
  • They are minimally processed

Steel cut oats really are a nutritional powerhouse, even more so than rolled oats or quick cooking oats because the oat is in the most natural state.  So good and so good for you!

For these vegan Mexican inspired steel cut oats, black beans provide extra protein along with the oats. Then, bell pepper, onion, jalapeño, and seasoning bring additional flavor to this spicy and zesty meal. But it also has plenty of tomato, avocado, and cilantro on top to bring fresh flavor to this simple meal.

But don’t think that the steel cut oats are bland by any means! Thanks so the addition of vegetable broth and miso paste, the ordinary oats are brought to a new level. They are creamy, rich, and honestly irresistible. It actually tastes remarkably like risotto, but so much better for you.

Last but not least, add your own favorite garnishes.  Salsa and hot sauce can bring flavor or heat, or add a sliver or two of fresh jalapeño if that’s your jam. We also love to sprinkle a little nutritional yeast on top for a mild cheesy taste. You really can’t go wrong!

Ingredients
  • 1 Cup Steel Cut Oats
  • 4 Cups Veggie Broth
  • 1 Medium Red Bell Pepper (Diced)
  • 1 Medium Jalapeño (Diced)
  • 1 Medium Red Onion (Diced)
  • 1 Cup Black Beans (Drained and Rinsed)
  • 1 tbsp Taco Seasoning
  • 1½ tsp Miso Paste
  • Avocado (Diced)
  • Tomato (Diced)
  • Cilantro (Chopped)
  • Nutritional Yeast (optional garnish)
  • Lime (optional garnish)
Instructions
  1. In a sauce pan, combine the stock and the oats and simmer over medium low heat for 35 minutes. Stir occasionally.
  2. While the oats simmer, prepare all the fresh produce.
  3. In a large frying pan with a tsp of oil, sauté the onion for 2-4 minutes on medium low and add the peppers and ½ the spice mix. Stir to combine. Cook for an additional 2 minutes and add the beans. Reduce the heat to low and stir.
  4. When there is 15 minutes left on the oats add ½ the spice mix and the miso paste and stir to combine.
  5. When the oats are done, spoon into a bowl and top with the pepper and bean mixture.
  6. Garnish with cilantro, tomato, avocado, nutritional yeast and lime.
  7. Serve warm and enjoy.
