Buying holiday gifts for coworkers and other acquaintances is not an easy task. In the past, we have resorted to making a large assortment of cookies and arranging pretty little goodie bags to pass out. This year being completely plant based we found that making a large assortment of cookies was a bit more complicated. It was then we decided a sweet yet savory nut mix was the route to go. This tasty treat will please most anyone and to be very honest is quite addicting if a bowl is sitting in front of you. The cayenne pepper is very subtle and should not scare too many people off but you can eliminate it from the recipe to please a larger crowd. This is a great time of year to make this easy snack to enjoy at home or give them away in pretty baggies as gifts for others to enjoy. Happy Holidays!
- 2 Cups Raw Nuts (We used Cashews, Pecans and Almonds)
- 2 Tbsp Maple Syrup
- 2 Tbsp Coconut Sugar
- ½ tsp Cinnamon
- ¼ tsp Salt
- ¼ tsp Cayenne Pepper
- 2 tsp Coconut Oil
- In a bowl combine the coconut sugar, cinnamon, salt and cayenne pepper. Next add the maple syrup and stir until a thick liquid is formed and all of the dry ingredients are incorporated.
- In a deep skillet over medium heat add the coconut oil and sugar mixture. Stir until mixture becomes smooth, about 5 seconds. Add the nuts to the skillet and stir to coat. Continue to cook, stirring occasionally for about 5 minutes. The nuts will soak up the sugar mixture and become very thick. Remove from heat when nuts are very sticky and coated well. There should be very little liquid left in the skillet.
- Spread nuts in a single layer on a parchment paper lined baking sheet to cool. When nuts are cooling, use a spatula to separate the nuts from each other. This will help any large clusters from forming.
- Store in cool dry place or serve when cooled completely.
