Tempeh: A Perfect Meat Substitute
Growing up in Montana, meat was always the focal point of every meal. There is a reason it is called ‘beef country.’ Therefore, when I initially went meat-free I had a difficult time. I would try to make meals I had eaten while growing up but just remove the meat. But I quickly learned, this was not always the easiest task.
But then fortunately, I realized there are many easy and healthy meat substitutes that give you just as much protein but have a fraction of the fat because they are made from plants. Tempeh is one of our favorites and it is made from soybeans. In fact, plant-based proteins will never have cholesterol because cholesterol occurs only in animal based foods.
The great thing about tempeh is that it is incredibly versatile. It can be cut in strips or crumbled, which is the way we used it for these Tempeh Sloppy Joes. This method of preparing tempeh can be great for people are accustomed to having meat at every meal because crumbled tempeh actually resembles meat, especially when you add flavorful seasonings. The seasonings you use are always the key which is why this version actually reminds me of the sloppy joe recipe I grew up eating at my grandma’s house.

Ingredients
Sauce:
- ½ tsp Garlic Powder
- ½ tsp Chili Powder
- ½ tsp Smoked Paprika
- ½ tsp Ground Coriander
- 1 Tbsp Miso Paste
- 2 Tbsp Chili Sauce
- 1 Tbsp Vegan Worcestershire Sauce
- 2 Tbsps Maple Syrup
- 15 oz Tomato Sauce
- 2 Cups Vegetable Broth
Sloppy Joes:
- 1 Cup Dried Red Lentils
- 1 Package Tempeh (Crumbled)
- 1 Onion Diced
- 2 Cloves of Garlic (Minced)
- 1 Green Bell Pepper (Diced)
Additional:
- 6 Sandwich Rolls or Hamburger Buns (GF if needed)
- 1 Avocado (Sliced)
- 1/2 Cup Radicchio (Sliced)
Instructions
- Wash and prepare all fresh vegetables.
- In a large bowl combine all of the ingredients for the sauce and stir until well combined.
- Place all of the ingredients for the sloppy joes and the sauce into the Instant Pot. Set it to “pressure cooker” for 10 minutes, making sure the vent is sealed.
- When it finishes cooking allow it to release its pressure naturally. When the pressure has released, open the Instant Pot and stir the sloppy joe. It can also be made on low in a slow cooker for 3 hours or on the stove top but we prefer the ease and quickness of our Instant Pot!
- Serve warm on rolls (Gluten Free if needed) with avocado slices and radicchio, if desired. These sandwiches go great with chips and peperoncinis. Enjoy!
- Leftovers can be refrigerated in an airtight container for up to 5 days or frozen for up to 3 months.
