Yep, Sweet Potato Tempura Tacos! Vegan tacos with an Asian twist.  An easy tempura batter coated on hearty sweet potato and finished with a drizzle of spicy avocado crema.  These are no ordinary tacos!

The unique flavors in these tacos combine the South with a twist from the East. Isn’t it always better when the world unites?!

Tacos are one of those foods I can eat day after day.  But sometimes it’s nice to try a new spin. The crunchy tempura coats the creamy sweet potato offering a sharp contrast.

Then the spicy avocado crema is drizzled on top along with quick pickled red onion, fresh cilantro, and green onion.  The ingredients bring incredible texture to these tempura tacos that go down all-too-easy!

 

Easy AND Delicious Homemade Tempura

Tempura vegetables have long been a guilty pleasure.  But these Sweet Potato Tempura Tacos are baked not fried, making these tacos much healthier than the original. They also have the added bonus of panko, perfect for munching and crunching.

To make uniform pieces of sweet potato for even baking, we recommend using a mandoline. However, if you are using a knife, just be sure to cut the sweet potato as evenly as possible.

Once the spud is cut, they are coated with flour, dipped in a flax egg, and finally panko bread crumb. The panko provides even more crispiness to the tempura sweet potato pieces.

Then simply bake your coated pieces until they are nicely browned.  Simple homemade tempura that you can easily make yourself. Seemingly decadent yet actually remarkably quick and easy. It doesn’t get any better!


Cooking Tips

  • First off, make the quick pickled onion. This will allow adequate time for pickling while you make everything else.
  • While baking the tempura sweet potato pieces, flip half-way through for even cooking and to give them a beautiful brown coating.
  • While the sweet potato bakes, make your spicy avocado crema. Add as little or as much jalapeño as you like. Any leftover crema is also great on a salad or any other Mexican entrée.
  • When reheating any leftover sweet potato tempura, we recommend using the oven to keep it nice and crispy. Day two, is just as good as day one!

Description

A festive taco fusion recipe of tempura coated sweet potato, quick pickled onion, and spicy avocado crema. Delish!


Ingredients

Quick Pickled Onion:

  • 1 Medium Red Onion (Sliced Thin)
  • 1/2 Cup Water
  • 1 Lime (juiced)
  • 1 tsp Salt
  • 2 tbsp Sugar

Avocado Crema:

  • 1 Avocado
  • 1/2 Cup Coconut Cream
  • 1/2 Jalapeño (Minced)
  • 2 Tbsp Lime Juice
  • 2 Tbsp Olive Oil
  • Salt and Pepper to Taste

Sweet Potato Tempura: 

  • 12 Sweet Potatoes (Peeled and Cut into Strips)
  • 1/2 Cup Flour (Gluten-Free if Needed)
  • 1 Tbsp Flax Meal
  • 3 Tbsp Warm Water
  • 1 cup Panko Bread Crumb (Gluten-Free if Needed)

Additional Ingredients:

  • 2 Tbsp Fresh Cilantro (Finely Chopped for Garnish)
  • 1 Lime (Wedged for Garnish)
  • 1 Green Onion (Sliced for Garnish)
  • 812 Tortillas

Instructions

  1. Prepare the produce as directed above. Preheat the oven to 400°F.
  2. Place all over the ingredients for the pickled onion on a small bowl. Stir to combine and set aside.
  3. Add the flax meal and warm water into a medium sized bowl and let sit for 5-10 minutes.
  4. Place the flour in a medium bowl and the panko in another.
  5. Dip the sweet potato strips first into the flour, then into the flax egg mixture. Lastly dip them into the panko breadcrumbs. Place the coated sweet potato on to a parchment paper lined baking sheet.
  6. Bake for 20-25 minutes, flipping halfway through.
  7. While the sweet potato bakes, make the spicy avocado crema. Place all of the ingredients for the crema into a food processor and blend until very smooth.
  8. When the sweet potato is nicely browned, it is time to plate. Place 3-4 pieces of potato into a warmed tortilla. Top with pickled onion, spicy avocado crema and garnish with green onion, cilantro and lime wedge if desired. Enjoy!
  9. Leftover ingredients can be stored in the refrigerator separately for up to 5 days.
