Summer is the perfect time for simple cooking. No one wants to spend most of their day cooking when everyone else is out enjoying the beautiful day. These Tempeh and Mushroom Yakitori Skewers are the epitome of simple cooking. Just marinate and grill.
Yakitori is a Japanese type of skewer that traditionally uses chicken. This is a healthy meatless alternative but it still has the great made from scratch marinade. Gone are the days of using sugar and chemical packed jarred marinades. With this simple recipe, I can assure you that you will be able to pronounce every ingredient. You will also have the added peace of mind when serving it to your family knowing there are no preservatives.
Get out of the rut of veggie burgers and make these Tempeh and Mushroom Yakitori Skewers. And feel free to make the marinade early and let them absorb all the tasty sauce. You can even make them a day or two ahead. The added soaking time will only make them better.
- Yakitori Marinade:
- ½ Cup Liquid Aminos or Soy Sauce
- ¼ Cup Mirin
- 5 Tbsp Sake
- 2 Tbsp Rice Vinegar
- 1 Tbsp Agave Nectar
- 1 Tbsp Chili Garlic Sauce or Sriracha
- 3 Cloves Garlic (Minced)
- 1 inch Grated Fresh Ginger
- ½ Cup Water
- Fresh Shitake Mushrooms (Stems Trimmed)
- 2 Packages Tempeh (Cut into Large Cubes) or make your own with this recipe.
- Large thin skewers (We like to use wooden skewers and just soak them in water for an hour before preparing)
- Light the grill to allow the coals to come to proper temperature.
- Wash and prepare all fresh produce.
- In a large bowl, add all of the ingredients for the marinade and stir to combine.
- Place the tempeh cubes, mushrooms, and marinade into a shallow dish and allow to sit for at least an hour. We prefer longer marinating time to enhance the flavor. We usually prepare it the night before.
- After the tempeh and mushrooms have marinated, construct the skewers. Slide the tempeh and mushrooms onto the skewers until each skewer is filled up. Do not discard the left-over marinade. You can use it later to brush over the finished product.
- Grill the skewers for approximately 5-7 minutes, turn the skewers while they are grilling to assure even browning.
- Serve with extra marinade over salad or rice.
