Yum! Just yum!!! There is nothing better than a fresh salad especially when it comes together in no time at all! This Beet & Apple Salad with Toasted Pistachios is just SO GOOD and SO EASY!
This is a beautiful and colorful salad that comes together in 10 minutes or LESS! Plus it looks lovely enough to serve guests and they never have to know how simple it was to make.
The key to this Beet & Apple Salad with Toasted Pistachios is a spiralizer. Spiralized vegetables just look fancy! We have a manual spiralizer and not only is it economical but it’s also great when you have limited storage like us. Of course, you can get larger versions but we think ours works just great. If you need a spiralizer you can find one here.
So, all you have to do is spiralize (or chop) the raw beet and carrots. Then finely chop the apple. We used Granny Smith apples because we liked the idea of the salad being red and green for the holidays but any variety will work.
But one thing we highly recommend that you do is toast the pistachios. Of course, you can just put them on raw but there is something about them being warm and toasty against the cool salad ingredients- simply spectacular!
This Beet & Apple Salad with Toasted Pistachios is marvelous any time of year but it shines during the holidays thanks to its bright colors. However, this easy salad will ultimately win you over with its incredible flavors. Simply spiralize and serve.
- 1 Container Spring Mix (or any lettuce variety)
- 2-3 Carrots (Peeled and Spiralized)
- 1-2 Fresh Beets (Peeled and Spiralized)
- 1 Granny Smith Apple (Cut thinly into Matchsticks)
- 1 Bunch Sprouts
- ½ Cup Pistachios (Shelled and Toasted)
- 1 Lemon (Juiced)
- Olive oil (optional)
- Wash the all produce. Peel and spiralized the beets and carrots. Cut the apple into matchsticks or thin wedges.
- In a dry skillet, place the nuts over medium high heat. Stir them occasionally until they are evenly toasted.
- In a large bowl place the lettuce, followed by the apples, carrots and beets. Top with sprouts and the toasted nuts.
- Squeeze the lemon over the salad and add some black pepper or extra virgin olive oil if desired.
- Enjoy!
