There is no better time for a fresh and light salad, especially if herbs are involved. This Herb Lovers Lentil Salad is bright, lemony, and surprisingly filling.
Lentils are a key ingredient in this spring salad. Not only are they full of protein to leave you full but they are also delicious. We prefer French green lentils because they keep their form and even have a slight bite to match the crispy greens. Just be careful not to cook them too long to make sure they don’t become mushy.
However, you would not have this Herb Lovers Lentil Salad without HERBS! These are the herbs that you will need:
- Tarragon
- Parsley
- Chives
The fresh herbs are simply delectable when mixed with the lentils and fresh greens. Sorrel has a nice lemony flavor that is further enhanced by the lemon juice and the spring mix and micro greens are amazingly fresh this time of year.
This herb and lentil salad will come together in no time at all, 20 minutes or less. Just put the lentils on to boil and chop while they cook. Then put everything in a big bowl and wah lah- a light yet satisfying Herb Lovers Lentil Salad.

- 1 Cup Dry Lentils
- Spring Mix Salad Mix
- 1 Bunch Sorrel (Chopped Fine)
- Micro Greens
- Radishes (Sliced Thin)
- 1 Small Bunch Chives (Chopped Fine)
- 1 Small Bunch Fresh Parsley (Chopped Fine)
- 1 Small Bunch Tarragon (Chopped Fine)
- 1 Lemon (Juiced)
- Cook lentils as per directed on the package.
- Wash and prepare all of the ingredients as directed above while the lentils cook.
- In a large bowl, combine the ingredients while reserving some of the herbs for garnish. Toss slightly to combine.
- Top with the remaining herbs, a splash of lemon juice and a sprinkle of black pepper.
- Enjoy!
