Creamy Lemon Artichoke Hummus

 

 

Hummus can be made a countless number of ways. I am sure you will be able to find several more ways on this site alone in the coming posts. We like this one because the lemon brightens the taste as the artichokes add a nice subtle layer of flavor. Serve it with fresh cut veggies, pita bread or use as a condiment for wraps. IT’S GRRRREAT!

Creamy Lemon Artichoke Hummus


Description

An easy homemade hummus featuring canned artichoke hearts and tangy fresh lemon. Delish!


Ingredients

Scale
  • 1 can (15oz) of your favorite Chickpeas (Also known as Garbanzo beans).  Drained and rinsed. Reserving the liquid.
  • 1 Jar marinated artichokes with most of the liquid drained.
  • Zest of one Lemon
  • Juice of same lemon
  • 2 T Tahini
  • 2 T Olive oil
  • 3 Cloves Garlic (or more to taste… I like more) peeled.

Instructions

  1. Using a citrus zester or a fine grater, zest the lemon trying not to get too much white pith.
  2. Combine all the ingredients into the food processor.
  3. Blend on high for 1-1.5 minutes or until completely pureed.
  4. If hummus looks too dry add some of the liquid you saved from the beans. 1 T at a time until you reach your desired consistency.
