Curried Cauliflower Daikon Wraps

Have you ever been in a pinch and needed to serve appetizers or a quick snack to a group of people. These Curried Cauliflower Daikon Wraps are a great choice. Not only are they bitesize and utensil-free, but they are also absolutely delicious and gluten free.

I do realize that curry powder is not everyone’s go-to flavor. If you are not that familiar with this amazing powder please give these wraps a try. They will give you a great idea of just how fantastic this kitchen staple is.

Although, it might sound surprising, the curry is tasty yet mild and will not overpower the bright dikon and sweet cauliflower. Then, you have the crunchy roasted nuts to round out this spectacular veggie treat.

Ingredients
  • 1 Heaping Tbsp Curry Powder (Or less depending on your preference)
  • 1 tsp Garlic Powder
  • 1 tsp Turmeric
  • ½ tsp Ground Coriander
  • ½ tsp Ground Cumin
  • ½ tsp Chili Powder
  • ½ Cup Raw Cashews
  • 1 Lemon (Zested and Juiced)
  • 2 Tbsp Olive Oil
  • 1 Large Head of Cauliflower (Cored and separated into bite sized florets)
  • 1 Medium/Large Daikon (Sliced into Thin Discs)
  • 2 Green Onions (Sliced) (Garnish)
Instructions
  1. Heat the oven to 400 degrees.
  2. Wash and Prepare all fresh vegetables.
  3. In a large bowl, combine the dry spices, lemon zest, lemon juice, and oil. Stir to combine completely.
  4. Next, add the cauliflower florets and the raw cashews to the bowl with the spice mix. Toss until the cauliflower and nuts are well coated.
  5. On a baking sheet lined with parchment or a thin layer of oil, spread the cauliflower and nut mixture into a single layer.
  6. Bake for approx. 30 minutes, flipping half way through. It is done when the cauliflower is tender and beginning to brown.
  7. To serve, lay out the daikon circles and place a small amount of the curry mixture onto the center of each circle. Fold up the sides of the daikon like you would a taco and secure with a toothpick if desired.
  8. Garnish with green onion.
  9. Enjoy!
