We are BIG fans of anything spicy. But that also means that sometimes we overdo it and need a cooling condiment to offset the heat. This cucumber raita is the ideal side dish for all spicy Indian dishes. 

But the best part? It can be made in a jiffy with just a handful of basic ingredients. Therefore, if you realize you may need something to tame an entree, look no further.

Creamy and Dairy-Free

Nowadays at almost every grocery store, you will find an abundance of dairy-free options in the yogurt section. This versatile ingredient can be used as a terrific creamy vegan base for this simple homemade raita recipe. 

Although any plain dairy-free yogurt will work, we prefer to use one made with cashews for extra richness. The yogurt adds a delicious tangy flavor coupled with a luscious and creamy texture. In other words, the perfect side for a spicy meal!

  • Dairy-Free Yogurt Tart dairy-free yogurt is a wonderful base for this amazing condiment. 
  • Cucumber  –  Fresh cucumber adds a slight crunch and a cooling effect. 
  • Onion  – Mild onion gives this mixture depth of flavor. 
  • Fresh Herbs  –  A combination of fresh cilantro and mint adds fragrance and earthy flavor. 
  • Lime  –   Bright and tangy lime juice helps to combine all of the flavors together. 
  • Cumin  –  Just a touch of cumin allows this condiment to pair perfectly with your favorite Indian dish.

  • Can this be made with only one herb rather than both? 

    • Absolutely. This raita can be made with only mint or cilantro instead of both. However, we love the bright combination when both herbs are used. Alternatively, you can also use fresh basil instead, if preferred. 
  • What type of dairy-free yogurt is best for raita

    • We recommend any plain yogurt with minimal sugar. It can be made from almonds, cashews, oats, or soy– whatever you prefer or have on-hand. 
  • Make Ahead

    • For maximum flavor and ease, make this raita a few hours or even the day before. This will allow the flavors to fully combine. 
  • Serving Suggestions

    • Serve this raita alongside any spicy Indian dish including masala, vindaloo, or any curry. Additionally, it can also be served over rice for a simple and flavorful side.

Description

A simple vegan recipe for raita– a creamy Indian condiment made with cucumber, mint & cilantro. Serve alongside spicy dishes to cool the palate.


Ingredients

Scale
  • 1 Persian Cucumber (Peeled, Grated and Squeezed)
  • 1 Cup Dairy-Free Yogurt
  • 1 Small Onion (Peeled and Finely chopped)
  • 1/4 Cup Cilantro Leaves (Finely Chopped)
  • 2 Tbsp Fresh Mint Leaves (Finely Chopped)
  • 1 lime (Juice)
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Salt (or to taste)
  • 1/4 tsp Ground Pepper (or to taste)
  • Extra Sliced Cucumber (Optional Garnish)
  • Additional Fresh Cilantro and Mint (Optional Garnish)

Instructions

  1. Peel the cucumber and using a coarse box grater, grate the cucumber into coarse shreds. Transfer the cucumber to a paper towel or clean kitchen towel and squeeze out as much moisture as you can. Discard the liquid and set the cucumber shavings to the side. 
  2. Prepare the onion, cilantro and mint. 
  3. In a medium bowl, add the yogurt, onion, cilantro, mint, lime juice, ground cumin, salt and pepper.
  4. Stir the ingredients until they are well combined. 
  5. Garnish with extra cucumber slices and fresh herbs, if desired. Use immediately or store in an airtight container in the refrigerator for up to a week.
