Instant Pot Split Pea BBQ

My, oh my! EASY doesn’t even begin to describe this Instant Pot Split Pea BBQ! It comes together in 15 minutes tops and can be used for sandwiches, lettuce wraps, over rice or a baked potato— the possibilities are endless… MEE OH MY!

 

A Unique BBQ Sandwich

Split peas are terrific coated in a rich tantalizing BBQ sauce.  They soak up all of the flavor splendidly and they are also loaded with fiber and protein (50% of your daily value of fiber and 11g of protein per serving to be exact- LOADED!). Plus, they only take 1 MINUTE to cook in an Instant Pot! That’s right, O-N-E minute.

After your split peas are cooked, simply set them aside, and use the Instant Pot to brown a little onion, garlic, and bell pepper.  Then, you just need to add the cooked peas and BBQ sauce and BOOM- That’s IT! An absolutely delicious one pot meal in less time than you spend mindlessly scanning the daily depressing news.  Or maybe that’s just me… but either way, it doesn’t get any easier than this Instant Pot Split Pea BBQ!

 

Easy Homemade BBQ Sauce

We opted to make our own zesty BBQ recipe from scratch. Here is our Homemade Maple BBQ Sauce recipe.  However, a store bought variety can be used as well.

There is just something fantastic about making your own sauce and knowing exactly what’s inside, and you can flavor it EXACTLY as you please Spicy? Absolutely!

  • Is there a way to make this recipe Gluten-Free?
    • Sure thing! Instead of serving the BBQ on a bun, it can be presented in a steamed collard green wrap or over a bed of lettuce.  It is also tasty inside a corn tortilla for a unique spin on a vegan taco. 
  • What if you don’t have split peas?  Is there a possible substitution?
    • Yes. This recipe also works great with lentils or crumbled tempeh. Just replace the split peas and make as directed. 
  • Can this recipe be made without an Instant Pot?
    • Absolutely.  It can also be made on the stove top.  Use 3 cups of water with your split peas and bring to a boil.  Then, simmer the peas for 30-40 minutes. While the split peas cook, sauté the other ingredients (onion, bell pepper, garlic) until tender and remove from heat. Once the split peas are tender, drain any excess water and add the sauté mixture and bbq sauce to the pan and mix. Place over the burner on medium heat for two to three minutes or two until warm. Then serve!

Ingredients
  • 1 Cup Dry Split Peas (Rinsed)
  • 3 Cups Water
  • 1 Medium Red Onion (Diced)
  • 1 Medium Yellow Bell Pepper (Diced)
  • 2 Cloves Garlic (Minced)
  • 1 ½ Cups BBQ Sauce (Homemade version HERE!)
Instructions
  1. Make the BBQ sauce as per THIS recipe or use a preferred store bought BBQ sauce.
  2. Place the rinsed peas into the Instant Pot, along with the water.
  3. Close the vent to “sealing” and set the Instant Pot to pressure cook “normal” for 1 minute.
  4. After it has finished cooking, release the pressure and open the top. The peas should be easy to bite but not mushy.
  5. Drain the peas and set aside.
  6. Wash the inside of the instant pot. Add a Tbsp of oil as well as the onion, garlic and peppers. Set to sauté “normal”.
  7. Stir frequently until it is fragrant and the onions are translucent.
  8. Add the peas as well as the sauce to the instant pot and stir constantly until it has thickened to your desired consistency.
  9. Serve on a bun, in a wrap, or over the grain of your choice or rice.
  10. Enjoy!
