Ingredients
  • 1 large Fresh Endive (Leaves Separated)
  • 1 15 oz. Can of White Beans(Drained and Rinsed) or about 1 ½ cups from dry.
  • 2 Small Shallots (Diced Small)
  • 8-10 Cherry Tomatoes (Diced Small)
  • 10-15 Assorted Olives (Pitted and Diced Small)
  • 1 Small Bunch Fresh Mint (Chopped)
  • 1 tsp Red Pepper Flakes
  • Salt and Pepper to Taste
  • 1 Tbsp Olive Oil
Instructions
  1. Wash and prepare all of the fresh produce.
  2. Place all the ingredients except the endive leaves into a large bowl.
  3. Stir to combine thoroughly.
  4. If desired allow to sit for a few hours to let the flavors incorporate. You can even make it a day ahead.
  5. One by one fill each separated endive leaf with the mixture.
  6. Serve as an appetizer or as a salad course.
  7. Enjoy!
