These Sweet Potato Dessert Waffles are a real treat. Not only are they delicious but they are also made out of tater tots. Sweet and SUPER EASY!

 

Deliciously Simple

These are definitely the EASIEST waffles we have ever made, but also one of the most spectacular because these are SWEET POTATO DESSERT WAFFLES!  But even better, they only have 6 ingredients!  Total! Did we say these were Easy?!

These are the ingredients you will need:

  • Sweet Potato Tater Tots (The brand Alexia carries a sweet potato puff – aka tot)
  • Coconut Milk (full fat not a light version)
  • Maple Syrup
  • Pure Vanilla Extract
  • Pecans
  • Coconut flakes

That’s it!

 

Great for Breakfast, Dessert, or Anything-In-Between!

Now this is technically a breakfast food, so by all means feel free to eat it in the morning.  But we are classifying it has a dessert waffle because then we can have breakfast ALL DAY LONG!

But the BEST PART… these are actually made out of tater tots!  Yep, you heard me right- tots!  (I can’t help but think of Napoleon pulling one of these out of his pocket! Haha!)

However, because they are made out of sweet potatoes they naturally lend themselves to something a little bit sweeter… Sweet Potato Dessert Waffles.  I just had to say the name again because it is so much fun to say!

 


Cooking Tips:

For the Waffles…

These waffles are INCREDIBLY easy because all one has to do is open the bag and spread them out on a waffle maker!  But the trick is to really pack them tightly.  We have even started with the whole waffle iron initially being covered and then once it begins to brown, fold down one side upon the other.  The effect… a perfectly fluffy yet still dense Sweet Potato Dessert Waffle.

No need to worry though if folding it sounds complicated, it will still turn out fabulous but it just won’t be as solid as our pictures.  There will be some airy holes but those are just perfect for the maple coconut whipped cream to fill into.

For the Whipped Cream…

The key is just to refrigerate your coconut milk (the whole fat variety) plenty ahead of time.  We like to put it is the fridge the night before or even 24 hours in advance.  The more solid the cream is, the better it will fluff up just like regular whipped cream would.  However, no need to fret if it doesn’t produce stiff peaks while whipping, it will still taste just as good if it is a little funny!

A Fun Garnish…

Finally, the last step to add just a little pizazz to these already magnificent Sweet Potato Dessert Waffles, is to sprinkle some chopped pecans and toasted coconut on top.  It really does make them even MORE amazing if you can believe it AND the pecans make them healthy, right?!  Well, at least they add a little protein and keep you full longer.

Description

These Sweet Potato Dessert Waffles are a real treat. Not only are they delicious but they are also made out of tater tots. They’re so tasty and SUPER EASY!


Ingredients

Scale
  • 1 20 oz. bag of Sweet Potato Puffs (We used the brand Alexia)
  • 1 15 oz. Can of Full Fat Coconut Milk (Refrigerated 12 to 24 hours)
  • ¼ Cup Pecans (Chopped)
  • ¼ Cup Coconut Flakes (Toasted)
  • 1 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract

Instructions

  1. Place the unopened can of coconut milk into the refrigerator over-night.
  2. While your waffle iron preheats, toast the coconut flakes. Place the coconut flakes in a dry frying pan over medium heat. Stir constantly until they are browned to your desired color.
  3. Chop the pecans, if using, and set aside.
  4. In a stand mixer or with a hand mixer, whip the now solid coconut milk along with the maple syrup and vanilla extract. While opening the chilled coconut milk, be careful not to use the portion that remained liquid. (We like to save the liquid for smoothies or coconut rice.)
  5. Place your sweet potato tots on the waffle iron in a single layer. Allow to toast for 5-10 minutes.
  6. After 10 minutes folder one half of the waffle iron over onto the other, creating a sandwiching effect. Close the waffle iron tightly and allow to toast for an additional 5-10 minutes or until browned to your liking.
  7. Serve with a dollop of whipped coconut cream, chopped pecans, toasted coconut, and even a drizzle of extra maple syrup. Enjoy!
