Preserved Lemon & Plum Highball

Summer is officially coming to an end soon, but hold on a little longer with this cheery Preserved Lemon & Plum Highball. This sweet and bubbly cocktail is sure to brighten your mood as we head into fall.

Preserved lemon is a quick and easy way to bring out the sweetness while still retaining the typical zip of fresh lemon. It will need 20 minutes for the sugar to begin to break down the lemon, but it is well worth it.

One twist with this Preserved Lemon & Plum Highball is incorporating the plum with the lemon. Lemon and plum, purple and yellow- they are meant to be friends. The sweetness of the plum compliments the tart lemon effortlessly.

Of course, you could still make this drink with just the preserved lemon but if you can get your hands on some ripe, fresh plums, I highly recommend the combo. It’s spectacular!

Once your lemon and plum is quick preserved, it will basically be a simple syrup that you can add to your glasses. Then, add the whisky (or really any spirit) and top with 7 up. Yes, in other words this could be called an extra fancy 7 and 7!

Preserved Lemon & Plum Highball

Serves: 2 drinks
Ingredients
  • 1 Fresh Lemon (Sliced into Small Wedges)
  • 1 Fresh Plum (Sliced into Small Wedges)
  • 3 oz. Seagrams Seven American Whiskey.
  • 7up Soft Drink
  • 3 Tbsp Sugar (We Used Turbinado Sugar)
  • Ice
Instructions
  1. Cut the lemon and plum as directed above. Place them in a bowl with the sugar. Stir to incorporate and set aside for 20 minutes.
  2. Remove the fruit from the bowl and squeeze excess juice into the bowl. A syrup will be left in the bottom of the bowl. Stir slightly to help dissolve the remaining sugar granules.
  3. Divide the syrup between to highball glasses.
  4. Pour the whiskey evenly between the two glasses after the syrup.
  5. Place ice in each glass.
  6. Fill each glass with 7up, pouring it directly over the ice.
  7. The syrup will remain at the bottom for serving but we recommend stirring it together before drinking.
  8. Enjoy!!!
