Totchos

The popularity of this dish has sky rocketed in the past few years, especially in the NYC area. Although it is pretty basic, Alissa and I make this when we just need something quick for dinner. I realize it is not the healthiest meal out there, but it is tasty! This recipe is based on ½ the package and that will feed 2-3 people. Feel free to add more toppings or adjust according to your own taste preferences. Have fun with this one, you can’t mess it up. Let us know if you have any twists on this meal that your family likes.

Ingredients:

½ – 1 package of tater tots (cooked as per package)

½ cup black beans, rinsed and drained

½ cup frozen corn kernels

½ cup shredded cheese (your choice)

1 avocado, sliced

1 small tomato, diced

1 small red onion, diced

1 small jalapeno, sliced into rings

¼ cup sour cream

1 small bunch cilantro, rinsed and stem removed

 

  1. Pre-heat your oven to 400 degrees and wash and prepare all fresh ingredients.
  2. Arrange cooked tater tots in an oven safe dish. They do not have to be in a single layer.
  3. Sprinkle black beans and corn onto the tots and cover with shredded cheese.
  4. Heat in the oven until completely melted. 5-10 minutes.
  5. When the cheese is melted, immediately top with the diced tomato, sliced jalapeno, sliced onion, cilantro and sour cream.
  6. Serve while it is still hot.
