Try to say that name 5 times fast! 😂 But truly chai tea and chocolate are a match made in flavor heaven. The natural spiciness of the chai tea is a spectacular compliment to the sweet cocoa flavor. 

Best yet, this pudding is extra chocolatey. Chocolate dairy-free milk doubles the chocolate flavor with a touch of sweetness. However, any plant-based milk will also work if necessary. 

Additionally, this snack or dessert only takes a few minutes to whip up. Then, just let it sit overnight or for at least a couple of hours for the chia seeds to congeal, producing a healthy “pudding” that’s loaded with protein.

  • Maple Syrup  –   This natural sweetener adds richness and depth of flavor while pleasing your sweet tooth. 
  • Optional Pudding Toppings  –  Pomegranate Arils and Chocolate Shavings add a gourmet touch. However, feel free to use any seasonal berry or to leave the toppings off entirely because this chia pudding has amazing flavor all on its own.

  • Does the chia seed pudding need to sit overnight or will it be ready sooner

    • In order for the chia seeds to congeal, a little time is required. However, two to three hours should be sufficient. 
  • Is there a substitute for the chai tea powder? 

    • Yes. We love the convenience of chai tea powder but as an alternative, you can also steep a bag of chai tea into the chocolate milk prior to adding it to the chia seeds along with the remaining ingredients. 
  • Tip: Mix the Chia Seeds Well. 

    • Chia seeds tend to stick together, so be thorough when stirring to avoid unhydrated chia seeds in your pudding. 
  • Tip: Get Creative with the Toppings!

Description

A rich chocolatey chia seed pudding that’s exploding with flavor. This vegan chocolate chai pudding is the perfect combo of sweet and spicy!


Ingredients

Pudding Ingredients:

  • 4 Tbsp Chia Seeds
  • 1/4 tsp Chai Powder
  • 1/4 tsp Cacao or Cocoa Powder
  • 1 Cup Chocolate Plant-Based Milk
  • 2 Tbsp Maple Syrup

Optional Toppings: 

  • 2 Tbsp Pomegranate Arils
  • 1 tsp Chocolate Shaving (Optional Topping)

Instructions

  1. In a small bowl, combine the chia seeds, chai powder, cocoa powder, and chocolate plant-based milk. Stir well to combine. 
  2. Next, add the maple syrup and stir. 
  3. Quickly spoon the mixture between two serving bowls and place them in the refrigerator overnight or until firm, approximately 2 hours.  
  4. Top with pomegranate arils and chocolate shavings, if desired, and serve.
