Easy Breezy Plant-based Pasta

Is there anything better than pasta?  But I’m not talking about pasta from a jar.  This sheet pan tomato sauce is fresh, tangy, and loaded with flavor. THIS is what homemade pasta dreams are made of!

However, it doesn’t just stop with the easy homemade tomato sauce.  Toasted breadcrumb is added for a pleasing crunch, along with salty olives and fresh basil.  This is one gourmet tasty meal that is ready in no time at all.

 

What You Will Need:

Pomodoro Pasta Sauce  A light and healthy sauce is made with just a handful of ingredients.  This Roasted Tomato Sheet Pan Pomodoro sauce takes advantage of beautiful tomatoes that are plentiful this time of year.

Pasta Noodles  –Any dried pasta will work.  We used gluten-free cavatappi chickpea noodles by Banza.

Garlic –  A couple cloves of garlic will provide a robust aroma and depth of flavor which offsets the tanginess and acidity of the fresh tomatoes.

Olives –  The olives bring saltiness to this pasta.  They are a perfect mix with the fresh sauce.  We like to use Castelvetrano olives but any variety will work.   

Fresh Basil  – This fresh herb was made for tomatoes. Add a little or a lot, but you will never regret the basil.  

Breadcrumb – The toasted gluten-free breadcrumb provides a nice crunchy contrast to the juiciness of the fresh tomatoes.

Vegan Parmesan – Feel free to either use homemade such as this Vegan Pepita Parmesan or you can use a sprinkle of store bought. You can also leave it out entirely if you prefer but we always love a little extra saltiness with this pasta dish.   

Crushed Red Pepper – The red pepper provides a little spice to this mild pomodoro pasta.

 


 

FAQ & Vegan Pasta al Pomodoro Tips:

  • Is this gluten-free?

    • Yup. As long as you use gluten-free noodles and breadcrumb, you are all set.
  • Can you blend the sauce into a purée?

    • Absolutely. If you prefer a sauce that isn’t as chunky, you can simply blend the ingredients from the sheet pan pomodoro before you top your noodles. You can even add a little nut milk, if you prefer a creamier sauce.
  • Is this sauce spicy?

    • No. You can make it spicier by adding more crushed pepper or you can leave it out entirely for a very mild tomato sauce.
  • Make Ahead Option:

    • The roasted tomato sheet pan pomodoro can be made in advance and just reheated to save time. Additionally, you can freeze the sauce as well for easy meal prep.

Description

Ingredients

Pomodoro Sauce (Try this homemade Roasted Tomato Sheet Pan Pomodoro recipe)

8oz. Pasta (Your Choice)

3 Garlic (Minced)

1 Cup Breadcrumb

1 Cup Castelvetrano Olives (Or Your Favorite)

3 Tbsp Vegan Parmesan (Garnish)

3 Tbsp Fresh Basil (Chopped for Garnish)

1 tsp Red Pepper


Instructions

  1. Make the sauce as per the recipe.
  2. Mince the garlic and add it to a skillet along with the bread crumb. Turn the heat on medium and stir constantly until the bread crumb is nicely toasted. Season with salt and pepper if desired and set aside.
  3. Cook the pasta as per the directions on the box.
  4. Serve the pasta immediately into bowls and spoon the sauce on top. Add olives to each bowl and garnish with breadcrumb, chopped basil, and vegan Parmesan. Enjoy!
  5. Leftovers can be refrigerated for up to 3 days in an airtight container.
