Cheesy Vegan Stuffed Burgers
Summer is upon us and that means it’s time for grilling! But there’s no need for unhealthy red meat when you can make a delicious vegan burger using merely a large mushroom brushed with a savory smoky sauce.
But it doesn’t stop there! Then, these easy “burgers” are stuffed with a protein-rich cashew vegan cheddar cheese sauce for the ultimate plant-based summer entree. This is one burger you will want to make all summer long!
WHAT YOU WILL NEED:
- Lion’s Mane Mushrooms – Amazing flavor and flaky texture, these mushrooms are a must if you can find them! We suggest looking at your local farmers’ market for these beautiful mushrooms.
- Vegan White Cheddar Cheese Sauce – Rich and creamy, this easy homemade sauce is made with protein packed cashews.
- Smoky Mushroom Sauce – A combination of vegan worcestershire, liquid aminos (or soy sauce) and liquid smoke produces a smoky marinade that turns a mushroom into a grilled masterpiece.
- Olive Oil – Just a little oil in the pan is needed for searing your mushrooms, producing golden brown perfection.

Can I use store-bought cheese instead?
- Absolutely. Feel free to use purchased vegan cheese or even traditional cheddar cheese if you do not follow a vegan diet.

Description
A smoky fungi burger that is made with a Lion’s Mane Mushroom stuffed with a homemade cheesy vegan white cheddar sauce. A perfect meatless recipe for grilling season!
Ingredients
Burger Ingredients:
- 1/2 Cup Vegan White Cheddar Cheese Sauce
- 2 Tbsp Liquid Aminos
- 1.5 tsp Vegan Worcestershire Sauce
- 1/8 tsp Liquid Smoke
- 4 Medium to Large Lion’s Mane Mushrooms
- 2 tsp Olive Oil
Burger Toppings/Condiments (Optional):
- 4 Buns
- Lettuce
- Sliced Tomato
- Sliced Red Onion
Instructions
- First make the homemade vegan white cheddar cheese sauce, if using. Store bought vegan cheese can be used as well. However, we find the sauce is easier to work with when stuffing the mushrooms.
- Next in a small bowl, mix together the liquid aminos (or soy sauce), vegan Worcestershire sauce and liquid smoke.
- Now brush off any dirt from your mushrooms and cut off the small dirty stem. Find the side of the mushroom and cut a pocket into the mushroom. Be careful not to cut all the way through in any direction. (See Picture)
- Fill in that pocket with 1-2 Tbsps of your cheese.
- Place your prepared mushrooms on a grill pan or frying pan coated with over medium high heat. While the mushrooms cook, immediately brush the smoky sauce over the tops of the mushrooms. Allow the mushrooms to cook until nicely browned then flip them over and brush again while the second side cooks. Remove from the heat when the mushrooms are tender and browned.
- Prepare your burger by placing the cooked mushroom between a bun with fresh lettuce, sliced tomato and onion, and an extra spoonful of cheese sauce and serve with plenty of napkins. Enjoy!
- Leftover burgers can be refrigerated in an airtight container for up to 5 days.
