Sometimes you just need a quick and easy recipe to whip up in a pinch. However, the great thing about this Tomato & Broccolette Tofu Scramble is that it not only comes together in a flash but it also looks fancy enough that you won’t feel funny feeding it to guests. What’s better than that, especially this time of year?!
The unique ingredient in this tofu scramble is the Broccolette. We love to use this broccoli hybrid because it has less of the woody stalk but just the same amount of beautiful florets to soak up flavor. For this reason, it works fantastic in many dishes but especially in this Tomato & Broccolette Tofu Scramble.
Another great thing about this tasty dish is that it can be easily modified. Just like a good ol’ regular egg scramble or omelet. Simply put in your favorite vegetables with the tofu and scramble. Easy peasy!
The key to a tofu scramble is to use extra firm tofu. Then, just be sure to squeeze as much of the moisture out of the tofu before breaking apart to cook. That way the pieces brown nicely and do not become soggy, particularly if you are using vegetables with lots of juice like tomatoes.
We definitely plan on whipping these up for others over the holidays for our family. Even those that typically don’t like tofu will LOVE this scramble. Yes, even my meat loving parents like this dish!

- 1 Brick Extra Firm Tofu (Drained, Pressed and Broken into Pieces)
- 1 Bunch Fresh Broccolette (Leaves removed and cut into Bite-Sized Pieces)
- 20 Cherry Tomatoes (Halved)
- 3 Shallots (Peeled and Sliced)
- 2 Cloves of Garlic (Peeled and Sliced)
- Fresh Parsley Leaves (Chopped for garnish)
- Fresh Chive (Chopped for garnish)
- Wash and Prepare all ingredients as indicated.
- In a frying pan with a little olive oil, sauté the shallot, garlic and broccolette for approx. 5 minutes, stirring frequently. Until garlic is fragrant and broccolette has started to become tender.
- Add the tofu pieces and sauté for an additional 5 minutes while continuing to stir. The tofu should begin to brown slightly.
- Next, add the tomato halves and cook for an additional 2 minutes.
- Serve and garnish with fresh parsley and chives. We like to top it with some nutritional yeast to add a little cheesy flavor.
