However, the simple crumbles are elevated and taken to a whole new level with the addition of a homemade savory and slightly spicy seasoning mix.

The seasoning mixture is a combination of key Italian flavors including fennel, garlic, and red pepper flakes.

  • Fennel Seeds Toasted fennel seeds make this meat-free sausage immediately reminiscent of real Italian sausage. 
  • Spices  – Smoked paprika, garlic powder and red pepper flakes add complexity and a touch of spice. 
  • Apple Cider Vinegar  – The acidity of vinegar helps to blend the flavors together. 
  • Liquid Aminos  –  Liquid aminos or soy sauce provide needed salt that amplifies the rest of the flavors and makes these crumbles little flavor bombs. 
  • Beyond Beef Crumbles  –   Beyond Crumbles or seitan create the perfect base for this faux sausage recipe, achieving the meaty mouth-feel of real sausage.

  • What plant-based meat-alternative is best for this recipe? 

    • Any vegan meatless crumble will work but we recommend using one that isn’t already flavored. Additionally, you can also use crumbled tempeh or extra-firm tofu as well for this recipe. 
  • What if I can’t find whole fennel seeds? 

    • Ground fennel can also be used but the flavor will be more subtle. 
  • Mix It Up 

    • Not the biggest fan of fennel? Try mixing up the spices and seasonings for this Italian crumble. You can also use oregano, basil, or parsley as an alternative.

Instructions

  1. In a small bowl, combine the smoked paprika, garlic powder, red pepper flakes, black pepper, vinegar, liquid aminos and vegetable stock. Stir to incorporate completely. 
  2. In a deep frying pan over medium heat, toast the fennel seeds until fragrant. Stirring frequently approx. 2 minutes. 
  3. Next add the oil to the pan along with the Beyond Crumbles. Stir occasionally, allowing the Crumbles to brown on all sides. 
  4. Once browned, pour the seasoning mixture onto the Beyond Crumbles and fennel in the pan. Stir continuously until the liquid has absorbed or evaporated. Transfer to a bowl and use immediately for pizzas, pastas or in any recipe you would use sausage.
  5. Leftovers can be stored in an airtight container in the refrigerator for up to 1 week.
