The Best Vegetable Fried Rice

Red pepper, broccoli, green beans- oh, my! This fried rice is full of nutritious fresh veggies. They provide health and a beautiful color combo for this plant-based entrée.

But it doesn’t stop there.  Then it has creamy diced avocado, smoked tofu, pineapple, green onion, and a smidge of lime juice.  This vegan pineapple fried rice is what vegetables dreams are made of- texture and color galore!

 

Pineapple Brings Pizazz!

There really isn’t anything better than fresh cut pineapple.  It’s tangy, sweet, and tastes absolutely incredible with veggies.

Did you know that pineapples actually grow up the ground?! I have to be honest, until we were fortunate enough a few years ago to visit a pineapple farm in Costa Rice, I had absolutely no idea. Plus, baby pineapples are probably the cutest thing there is!

But back to eating pineapples… I know it takes a minute but fresh will taste the best for this Vegan Pineapple Fried Rice. But if you need to save a minute, frozen or pre-cut is always an option.

 

A Great Way to Use Leftover Rice and Veggies

One terrific thing about this Vegan Pineapple Fried Rice is that it can easily be adjusted according to what you have on hand. Any vegetables will work and taste delicious with the fresh pineapple.

However, to create this meal as directed, here is what you will need:

  • Cooked Brown Rice
  • Fresh Cut Pineapple
  • Red Pepper
  • Broccoli
  • Green Beans
  • Green Onion
  • Avocado
  • Tofu
  • Optional: Pepitas, Cilantro, and Chopped Peanuts for Garnish

But as mentioned, feel free to be daring and switch out some of the ingredients according to what you have available or according to your personal preference.

  • Can other varieties of rice be used?

    • Sure.  We prefer brown so that’s what we used but white, jasmine, black or forbidden, or even quinoa or other grains can be used instead. If you aren’t using leftovers, make the rice or grain first and let it sit while you chop all of the veggies because it tends to work best once the rice has dried out some.
  • Is there a possible substitute for the tofu?  

    • Absolutely. You can replace the tofu with tempeh, seitan, or leave it out entirely.  If you add pepitas or sunflower seeds you will still have a solid protein source or you can add a handful of cashews instead of the smoked tofu.
  • Can frozen vegetables be used rather than fresh?

    • Yes! Not only does this dish make use of leftover rice but it can easily be made using frozen veggies. Just add them to the walk and sauté as directed.
  • Why does fried rice sometimes turn out soggy or mushy?

    • Usually this is due to the fact that the rice is cooked right before frying. By using day old rice or allowing your cooked rice to sit for a while before frying, it will begin to firm up and decrease the moisture content. By simply giving the rice time, you will end up with delicious fried rice every time.

Description

A healthy homemade recipe on a takeout classic. This plant-based meal consisting of brown rice, classic veggies, avocado, and fresh pineapple are sure to please- no greasy takeout needed!


Ingredients

4 Cups Cooked and Cooled Brown Rice

1 16 oz Extra Firm Tofu (Cubed)

1 Tbsp Liquid Aminos or Soy Sauce

½ tsp Liquid Smoke

1 Red Bell Pepper (Diced)

1 Medium Head Broccoli (Chopped)

1 Cup Fresh Green Beans (1 inch pieces)

3 Cloves Garlic (Minced)

2 Inch Piece of Fresh Ginger (Peeled and Minced)

2 Cups Pineapple (Fresh or Frozen- Peeled, Core Removed and Chopped)

2 Tbsp Liquid Aminos or Soy Sauce

2 Tbsp Mirin

1 Tbsp+ Chili Sauce

½ Lime (Juiced)

2 Green Onions (Chopped)

Avocado (Garnish)

Fresh Cilantro (Chopped for Optional Garnish)

Chopped Peanuts (Optional Garnish)

1 Tbsp Pepitas or Sunflower Seeds  (Optional Garnish)


Instructions

  1. Prepare rice and transfer to a bowl and allow it to stand uncovered for 20-30 minutes.
  2. Prepare all fruit and vegetables as directed above.
  3. In a large skillet coated with 1 tbsp of oil, cook the cubed tofu over medium high heat. Stir frequently to ensure even browning.
  4. Once lightly brown on all sides (approx. 5-7 minutes), add the soy sauce and liquid smoke to the pan. Stir the tofu until the liquid is gone. Transfer to a bowl and set aside.
  5. Wipe out the skillet and add 1 tbsp of oil. Sauté the broccoli over medium heat for 2-3 minutes. Stir occasionally.
  6. Next, add the green beans and red pepper. Cook, stirring frequently for 3 minutes.
  7. Add the garlic and ginger to pan and stir to combine.
  8. Then, add the rice to the vegetable mixture and stir to incorporate. Cook, stirring frequently for 1-2 minutes to warm the rice.
  9. Next add the soy sauce, mirin, and chili sauce. Stir to thoroughly incorporate.
  10. Finally, add the pineapple and cooked tofu to the rice and turn off the heat. Add the lime juice and stir to combine.
  11. Plate the rice and garnish with the chopped green onion, cilantro, avocado, pepitas, and peanuts if using. Enjoy!
