A lot of people like to ask, “If you’re vegan, what DO you eat? But, since becoming plant-based I have never felt like I “couldn’t” eat something. I always took it as a challenge to see if a recipe could be adjusted and made vegan without comprising on flavor. This Vegan Spinach Artichoke Pizza was one of those challenges.
There is a pizza place in New York that is famous for a spinach artichoke pizza. People love their pizza. We would have slices from this parlor every once and awhile when we were vegetarian but stopped after cutting out dairy. This Vegan Spinach Artichoke Pizza is our recreation of this very popular NYC slice, but completely plant-based.
The flavor of this pizza is AMAZING! The white beans and artichokes combine to give this slice a very creamy texture, while the spinach brings out a nice earthiness. And then, last but not least, it has LOTS of roasted garlic. We like to save some of the artichokes to serve on top because they just look beautiful combined with the fresh basil. This is one gorgeous pizza!
Creamy, earthy and garlicky…. this Vegan Spinach Artichoke Pizza is simply irresistible- AND it tastes just like the slice I remember. Challenge met. Please give this pizza a try. It’s so worth it.
- 1 Pizza Crust (Your Choice, we made Gluten-Free)
- 1 Large Jar of Marinated Artichoke Hearts (Drained)
- 1 15oz. Can White Beans (Drained and Rinsed)
- 3-4 Cups Packed Fresh Spinach (Wilted)
- 3 Tbsp Nutritional Yeast
- 4 Cloves Roasted Garlic
- 1 Lemon (Juiced)
- 1 Bunch Fresh Basil Leaves
- ¼ Cup Pine Nuts (Toasted)
- Red Pepper Flakes (To Taste)
- Red Peppercorns (To Taste)
- Wash and prepare all of the fresh produce.
- Meanwhile, Drain and Rinse the beans, Drain the artichoke hearts, Roast the garlic and toast the pine nuts.
- Pre-heat the oven to 400 degrees
- Over medium heat, in a dry frying pan, add the fresh spinach. Cover and allow to wilt for 2 minutes. Stir and allow to cook until completely wilted, approx. 2 more minutes.
- In a high-speed blender, add the beans, lemon juice, nutritional yeast, half of the toasted pine nuts and half of the artichokes. Blend on high until completely smooth.
- Next add the wilted spinach, roasted garlic and ½ of the remaining artichokes. Pulse until well combined but not smooth.
- Spread the mixture onto a pizza crust. Feel free to spread it on thick.
- Bake for 15-20 minutes or until it has started to brown.
- Garnish with the remaining artichokes, remaining toasted pine nuts, fresh basil and pepper.
