Wait for it… FRENCH FRIES!!! There is nothing better in the world than crispy crunchy fries. Well, maybe there is… Homemade Fries with Creamy Horseradish Drizzle!

These homemade french fries are pure joy, especially when you realize they are actually potatoes with nothing else added. That’s right making your own french fries are honestly incredibly easy, especially if you happen to have a mandolin.

Mandolins are an essential kitchen gadget in my book. Not only are they incredibly useful when you routinely cut lots of vegetables, but they are also budget friendly. If you don’t already have one, it’s time! We have had this ONE for years and love it.

Additionally, the trick to extra crispy french fries is soaking your freshly chopped potato sticks in cold water. This helps to remove starch and makes them oh so crunchy when baked. We opted to use an air fryer but they can also be back in the oven for 20-25 minutes at 425 degrees or even fried in a typical deep fryer.

However, the real gem of this recipe isn’t the french fries, it’s the creamy Horseradish Drizzle with just the perfect amount of zip. Fresh horseradish is readily available this time of year but jarred can also be used. I would just

suggest starting with a lesser amount in either case and adding more until you reach your desired level of heat.

Ingredients
  • 4-5 Russet Potatoes (Cut into Fries)
  • 1 Cup Fresh Horseradish (Peeled and Chopped)
  • ⅔ Cup Raw Cashews (Boiled)
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Mustard (your choice)
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • 1 Cup Cashew Water
Instructions
  1. Wash and prepare all fresh produce as directed above.
  2. After cutting the potatoes into fries, soak them in cold water for 7-10 minutes. This removes excess starch.
  3. While the potatoes are soaking, boil the cashews for 10 minutes. Reserve at least 1 cup of the boiling water when draining the cashews. This will be used in the sauce.
  4. Cook the fries. We used an air fryer, for 20 minutes. If you do not have an air fryer you can bake or even deep fry your fries it’s your choice. Just keep in mind the crispier the better.
  5. Make the sauce. Place all of the sauce ingredients into a high speed blender, and blend on high until extra smooth and creamy.
  6. Once the fries have finished cooking, place them on a serving plate and drizzle the sauce onto the fries.
  7. Garnish with fresh herbs if desired.
  8. Enjoy!!
