We have always been big fans of honeynut squash. It’s petite size and sweet flavor make it a delectable combination that’s also easy to prepare.

However, if you are looking for a super simple recipe to enjoy this seasonal delicacy, look no further than this spicy side dish. It’s bursting with flavor and only requires 2 key ingredients! 

 

WHAT YOU WILL NEED:

  • Honeynut Squash This adorable squash has an intensely sweet flavor when roasted at high heat. Additionally, you can eat it’s skin. 
  • Zhoug –  This Middle Eastern condiment made with cilantro, peppers, and spices has a deep robust flavor that compliments the sweet squash. Try this easy homemade Creamy Avocado Zhoug recipe or use store bought. 
  • Olive Oil – The oil provides necessary fat and allows the squash to become perfectly brown. 
  • Salt & Pepper –  A dash of salt and pepper on the squash brings out its natural caramely flavor.

  • Can you eat the skin of the Honeynut Squash? 

    • Yes! Not only is this squash naturally individualized but every part of it can also be enjoyed. Simply cut it in half lengthwise and roast. Easy-breezy! 
  • What does honeynut squash taste like? 

    • This tiny squash has big flavor. It is intensely sweet (hence the name!) and has a deep almost caramel flavor when roasted. We would describe it as a more concentrated and sweet butternut squash.  
  • Top with zhoug immediately before serving. 

    • This will allow for easier storage if there are leftovers. Additionally, extra zhoug can be used on everything from grain bowls or salads to pizza and pasta.  
  • Make your own zhoug.

    • Although you can now find this spicy Middle Eastern staple at grocery stores including Trader Joes, it is super easy and quick to make your own. Roasted Honeynut Squash with Spicy Zhoug

Description

A quick & easy Fall side that’s also healthy! This roasted honeynut squash with spicy Middle Eastern zhoug is delicously sweet with a kick.


Ingredients

Scale
  • 4 Honeynut Squash (halved and deseeded)
  • 1 Tbsp Olive Oil
  • 1/4 Cup Zhoug (Try this Creamy Avocado Zhoug recipe!)
  • ¼ tsp Salt & Pepper (to taste)

Instructions

  1. Make the zhoug (if not using store bought). 
  2. Preheat the oven to 400°F
  3. Cut the squash in half lengthwise and scoop out the seeds. (We love to roast them with salt and pepper for a snack while the squash cooks!)
  4. Brush the cut side of the squash with olive oil. You can also season with salt and pepper at this time if desired. 
  5. Place the squash cut side down on a baking sheet and bake for 20-30 minutes or until soft to the touch. 
  6. Remove from the oven and arrange flesh side up on a serving plate. Spoon the zhoug over the squash. Serve immediately and remember the skin is edible! Enjoy.
