A Creamy Plant-Based Cheese

More cheese please! We rarely have a refrigerator that doesn’t have some type of plant-based cheese. It might be Vegan Pepita Parmesan, Vegan Fresh Mozzarella, or Simple Vegan Ricotta Cheese, depending on what recipes we might be making that week. 

But we must say, the combination of tangy cheddar with garlic, onion, sesame and poppy seeds, and salt is just too good to be true. Everything bagel seasoning really does take this easy cashew “cheese” to another level.

The salty and robust seasoning mixed with the nutty creaminess of the blended cashews is a match made in heaven. Best yet, it comes together in less than 10 minutes plus chill time. Yes, please! 



  • Cashews When blended, the nuts create the creamy texture of this sliceable cheese. 
  • Garlic –  Never enough garlic. It adds to the flavor complexity of this cheese. 
  • Nutritional YeastThese dry yellow flakes add the perfect cheese mouth feel. Dry and tart. 
  • Onion Powder Mild and distinct. A great seasoning to replicate the various flavors in cheese. 
  • Tapioca Flour  Important for color and consistency. This powder keeps the cheese white and helps make it solid during the heating process. 
  • Dijon Mustard Taste the cheese and you will get it. It just works. 
  • Apple Cider Vinegar The vinegar adds the tart taste that keeps you coming back for another slice. 
  • Miso Paste A perfect substitute for salt and it also adds umami. 
  • Agar Agar Powder –  This is possibly the most important ingredient. This powder makes this smooth liquid into a smooth solid cheese. 
  • Everything Bagel Seasoning –  The flavor maker of this great side. Substitute it if needed, but we love it and think you will too.

  • Is this recipe gluten-free? 

    • Yup! This “cheese” is not only dairy and soy free, it is also free from gluten. 
  • Can you make your own Everything Bagel Seasoning? 

    • Absolutely. Simply mix dried minced garlic, dried minced onion, sesame seeds, poppy seeds, and sea salt. That’s it. No need to purchase!  
  • Coat with the seasoning right before serving.

    • If you plan to enjoy your cheese that same day, you can line the molds with everything bagel seasoning for easier coverage. However, if you plan to make it a day or two in advance, we recommend refrigerating the cheese without the seasoning and sprinkling it on before serving. 
  • Freeze the cheese for easier slicing. 

    • If you prefer a cheese that you can slice, we recommend allowing it to chill in the freezer for 15-20 minutes prior to serving. However, if it is left in the refrigerator, it will have a softer consistency that is perfect for spreading on a bagel or toasted bread.

A tangy cashew-based cheese coated in everything bagel seasoning. This Vegan Everything Sharp Cheddar is amazing on just about everything!




  • 2 tsp Agar Agar Powder
  • 3/4 Cup Water


  • 3 Tbsp Everything Bagel Spice Blend


  1. Place the nuts into a sauce pan and cover with water. Boil the nuts over medium high heat for 10 minutes or they can be soaked overnight. 
  2. Drain the nuts and place them into a high speed blender with the rest of the cheese ingredients. 
  3. Blend until very smooth and there are no visible particles. 
  4. Prepare molds for your cheese by coating a few wide mouthed jars with a thin layer of oil. 
  5. In a deep frying pan add the coagulant ingredients. Over medium heat, stir the coagulant until the agar powder has dissolved. 
  6. Pour the cheese mixture into the pan and stir constantly. The cheese will begin to thicken within 1-2 minutes. Stir more vigorously for the next 1-2 minutes until the cheese becomes thick and smooth. 
  7. Pour the mixture into the prepared molds. Smooth the top with a wet spoon. 
  8. Cover and place in the refrigerator for at least 1.5 hours.
  9. Coat with everything bagel spice before serving.
