We first started making this sauce when I was sick of all the additives and sugar we found in store bought sauces and to be honest none of them were spicy enough for us. We will make this sauce on a Sunday morning and it becomes as convenient as a store bought sauce for us during the week. The only difference is we know exactly what is in it. You can adjust the spice to your taste obviously. We do tend to like ours pretty darn hot.
- 1 22oz can plum tomatoes
- 1 red onion
- 3 Tbsp tomato paste
- 4 garlic cloves
- 2 Tbsp crushed red pepper more or less to taste
- ½ tsp dried oregano
- ½ tsp dried parsley
- 2 tsp dried basil
- 2 tsp garlic powder
- salt and black pepper to taste
- olive oil
- Peel and chop garlic cloves and onion.
- Over medium heat cover the bottom of a high sided pan with a thin layer of olive oil and stirring often sauté onion and garlic until onion begins to become translucent and aromatic about 3 minutes.
- Add the tomato paste and stir constantly for 1-2 minutes.
- Next add tomatoes and dry spices.
- With your cooking utensil, crush and break apart tomatoes to form bite sided chucks.
- Simmer sauce for 20-25 minutes or longer if desired until onions are soft and all ingredients have incorporated well. Sauce will thicken some.
- Serve immediately with your favorite pasta or save in refrigerator for up to a week or freeze for later use.
