Summer means peaches! Summer also calls for coleslaw! Put them together and what do you have?!… this fresh and flavorful Peach and Pepita Slaw!

 

A Perfect Summer Slaw

There is nothing better than a big colorful bowl of veggies in the summertime and that’s exactly what this coleslaw is.  But it also has a bright and fresh miso ginger dressing that keeps everyone coming back for more!

 

Packed with Healthy Vegetables and Fruit

Now we opted to take the route of using our good ol’ trusty mandolin to chop up the cabbage, kohlrabi, and radicchio.  But if you are in a crunch for time, a bag of shredded cabbage from the store works just as well.

But this summer slaw doesn’t stop there!  You need the main event- THE PEACHES!  I always find it excruciating to wait for peaches to ripen.  I know a paper bag hurries the process along but I wait all year for this!

However, for this Peach and Pepita Slaw, it’s actually alright if the peaches aren’t quite ripe.  They will still taste absolutely delicious next to all of the other veggies. Just be sure to chop them small, like matchsticks so they can be fully coated by the dressing.

 

The Finishing Touches…

Next, add your fresh herbs and pepitas into the mix.  The pepitas give a nice crunch and add a little protein and the fresh basil and mint provide loads of flavor that pair amazingly well with the peach.

Finally, mix up the easy miso ginger dressing and toss into the slaw until everything is well coated and you will have one killer coleslaw.

Description

Crunchy cabbage, kohlrabi, radicchio, fresh herbs, peaches, and pepita seeds covered with a miso ginger dressing. This is not your typical coleslaw!


Ingredients

Slaw:

  • 2 Peaches (Cut into Matchstick size pieces)
  • 3 Small Kohlrabi (Grated Large)
  • 1 Medium Radicchio (Shaved)
  • 1 Small Green Cabbage (Shaved)
  • 3 Green Onions (Cut Thin and Long)
  • 1 Bunch Fresh Basil (Chopped)
  • 1 Bunch Fresh Mint (Chopped)
  • 2 Tbsp Pepitas

Dressing:


Instructions

  1. Wash and prepare all of the fresh produce as directed (see photo below).
  2. In a small bowl, combine the dressing ingredients and stir to combine.
  3. In a large bowl, combine all of the slaw ingredients. Stir to incorporate.
  4. Pour the dressing over the slaw and stir to combine.
  5. Add extra herbs and pepitas on top before serving if desired and enjoy!
