Description
Spicy plant-based air-fried taquitos filled with chipotle seasoned shredded sweet potato and mashed black beans. Made with only 5 ingredients and a fraction of the oil, these crunchy Mexican rollups deliver BIG flavor!
Ingredients
1 large onion (sliced thin)
2 medium sweet potatoes or 1 large (grated)
6 chipotle peppers with adobo sauce (chopped)
1/2 cup black beans (mashed)
12 or more tortillas (corn or flour)
Fresh cilantro (Optional garnish)
Instructions
- Prepare all ingredients as directed above.
- In a large frying pan with a little oil, sauté the onion over medium heat until fragrant.
- Next, add the grated sweet potato to the pan. Continue to cook and stir until sweet potato is soft. Approx. 5-7 minutes.
- Add the chopped chipotle peppers to the mixture and stir to combine.
- Prepare the taquitos: One at a time, warm the tortillas in a dry skillet over medium heat for 1 minute or until pliable.
- Place a small amount of mashed black beans into a tortilla followed by the sweet potato mixture. Make sure to cover the length of the diameter. Then roll the tortilla tightly.
- Cook the taquitos for 7-10 minutes at 400°F or until evenly browned.Depending on the size of your air fryer you may have to work in batches.
- Once all of the taquitos are cooked. Plate and garnish with fresh cilantro if desired.
- Serve immediately with salsa, hot sauce, or cashew nacho cheese sauce for dipping and enjoy!
- Leftovers can be reheated by placing them briefly back into the air fryer for approximately 3 minutes or by warming them in the oven on a baking sheet for 5 to 10 minutes at 425°F.
