Everyone knows that fried food is NOT good for you. But somehow we still seem to love indulging in it from time to time. Vegans are no different!

One great option for splurging yet still eating relatively nutritiously is opting for air-fried food rather than deep fried. These taquitos are still crispy and crunchy on the outside but made with a fraction of the oil.

Smoky & Spicy Chipotle Sweet Potato

These vegan taquitos don’t only require less oil and fat, they are also filled with healthy plant-based staples, vitamin rich sweet potato and protein packed black beans.

The sweet potato is shredded which allows it to soak up more of the smoky and spicy flavor from the canned chipotle peppers in adobo sauce. If you have never used them, you will be amazed with their ease and incredible flavor.

But it doesn’t stop there! These taquitos include mashed black beans.  The beans provide protein and transforms this delicacy from an indulgent side or appetizer into a full satisfying meal.

  • Are taquitos healthy?

    • Traditionally no. However, if you air fry or bake the taquitos they are healthy, especially when they are filled with nutritious plant-based ingredients like sweet potato and black beans.
  • Are chipotles in adobo sauce spicy?

    • Yes, but they are a mild spice level for most pallets. Their level of heat is comparable to a jalapeño pepper.  Therefore, if jalapeños tend to be spicy for you, feel free to reduce the number of peppers that you use.
  • Can the taquitos be baked instead of air fried?

    • Absolutely! If you don’t have an air fryer, you can make these in the oven.  Bake them at 425°F for 15-20 minutes on a parchment lined baking sheet. You may also want to flip them half-way through baking so they evenly brown.

Spicy plant-based air-fried taquitos filled with chipotle seasoned shredded sweet potato and mashed black beans. Made with only 5 ingredients and a fraction of the oil, these crunchy Mexican rollups deliver BIG flavor!



1 large onion (sliced thin)

2 medium sweet potatoes or 1 large (grated)

6 chipotle peppers with adobo sauce (chopped)

1/2 cup black beans (mashed)

12 or more tortillas (corn or flour)

Fresh cilantro (Optional garnish)


  1. Prepare all ingredients as directed above.
  2. In a large frying pan with a little oil, sauté the onion over medium heat until fragrant.
  3. Next, add the grated sweet potato to the pan. Continue to cook and stir until sweet potato is soft. Approx. 5-7 minutes.
  4. Add the chopped chipotle peppers to the mixture and stir to combine.
  5. Prepare the taquitos: One at a time, warm the tortillas in a dry skillet over medium heat for 1 minute or until pliable.
  6. Place a small amount of mashed black beans into a tortilla followed by the sweet potato mixture. Make sure to cover the length of the diameter. Then roll the tortilla tightly.
  7. Cook the taquitos for 7-10 minutes at 400°F or until evenly browned.Depending on the size of your air fryer you may have to work in batches.
  8. Once all of the taquitos are cooked. Plate and garnish with fresh cilantro if desired.
  9. Serve immediately with salsa, hot sauce, or cashew nacho cheese sauce for dipping and enjoy!
  10. Leftovers can be reheated by placing them briefly back into the air fryer for approximately 3 minutes or by warming them in the oven on a baking sheet for 5 to 10 minutes at 425°F.
